How Is Cream Is Made
There are two main types of ice cream. Soft ice cream is made from a powder and is a single stage process requiring one ice cream machine. Artisan or 'hard' ice cream is more of a traditional dairy ice cream. This is made in a four stage process. First the mixture has to be treated by means of pasteurisation (heating and cooling). The pasteurised mixture is then aged by cold storeage before it is finally transfered to a batch freezer where it is made into the final product. Carpigiani manufacture machines to do all a these processes. Treatment Machines perform the pastuerisation and aging while Batch Freezer machines turn the mixture into ice-cream.
